This was a lucky fridge’s scraps happening that has become a staple in our house.
It’s cheap, easy, tasty, quite fast and even my four year old picky pants loves it.
I blend it for her peace of mind (and mine), whole she’ll never let it near her mouth.
Amen to the blender!
-1 whole cauliflower
-1 cup of coconut milk
-1 cup of tomato puree
-1 teaspoon of green curry paste (or some fresh tasting curry spices like madras)
-Bit of heat if your spices are missing some (shiracha…)
-bit of greens. 1/4 cup of frozen peas, bit of cilantro, green onions
Cook your cauliflower in small pieces and cook over high heat to get some color and flavor.
Reduce the heat to medium, add the chopped onion,
Add the peas, the tomato puree and 2/3 cups of water, boil til the cauliflower is nice and soft(takes a while, hence the small pieces…)
Add water if needed. Should always about cover the cauliflower.
Once cooked add the coconut, spices, salt, chopped cilantro and chopped green onions
Cook another minute
Then either serve as is or blend as a soup (you may need more water to blend, if so you’ll need reseasoning
